PAMA started in 2011 in east london with Patka's and Martin's dream to make UK's finest unpasteurised, organic Sauerkraut. The idea was simple. Only using the highest quality ingredients, sourced as local as possible to create preserved seasonal vegetable with increased nutrition and flavour: sauerkraut, kimchi and pickles. PAMA’s ferments are organic certified. PAMA’s Krauts are fermented for at least 1 month, in barrels at Sheepdrove Organic Farm in West Berkshire. PAMA is using Celtic sea salt or Sel de Guerande Atlantic is hand-harvested. Guerande produces the salt that is the lowest in sodium and the richest in precious beneficial elements.
